A dish with ancestral roots, where cultures meet through preservation techniques, pre-Columbian knowledge and fresh ingredients.
With the arrival of citrus, modern ceviche was born: fresher, sharper and more alive.
At Lima we reinterpret that tradition while preserving its essence, using local fish and selected produce to keep its soul intact.
